Vor dem Gebrauch das Messer scharf schleifen. Besteck dann gründlich mit haushaltsüblichem Spülmittel reinigen, mit kochendem Wasser abspülen und trocknen. Danach mit hocherhitzbarem Speiseöl (z. B. Rapsöl) dünn einreiben und dann 30 Minuten auf min. 250° erhitzen / einbrennen. Nach dem Gebrauch nur mit heißem Wasser reinigen, da ansonsten ein erneutes Einbrennen erforderlich wird.
